Simple dinner salad

Today I hard boiled 6 eggs in the afternoon and ate three of them half choking-ly. So for dinner, I decided to do better than that. I minced a bit of red pepper, one tomato, some onion and sprikled it all with a generous serving of cilantro. Just seasoned with salt, this was a joyful meal instead of trying to choke down eggs. A little bit of intention can bring joy to food. Next time, I will cook up some baigan bharta for lunch. I love it ohh so much!

First a bit about myself and prepping for week 1 (or is it week 3?)

Hello there! I have embarked on a new journey to achieve greater endurance and strength in life. While I don't have goals that I am strongly committed to, I have some general directives. First things first, over the last few months of slacking in my workouts and not following any meal plans, I have put on a good 15 lbs - which I wouldn't be too worries about of they were not starting to limit my wardrobe choices and my overall energy level. I don't want to have to search for that same style of sweater when I am just getting ready for work. I like fitting in my jeans and feeling all toned and tight and fabulous. Aside from the get back to ~20% body fat goal, I do want to run a sub 2 half marathon, improve my lifts, may be run a marathon, get better at swimming and get those pull ups. One thing that keeps me super inspired is getting those rope climbs without using my legs. I think I am just inspired by that 'Challa' song. So, with the intro squared off, I am start...
